Gooey caramel, buttery pecans, sensuous cinnamon–these Ultimate Low-Carb Caramel Pecan Sticky Buns deliver! Even the dough meets the most discriminating standards. These are the kind of treat most low-carbers think is only a dream. Dream no more! These buns exist and you can whip them up in your own kitchen.

What makes these buns better? Well, for starters, the caramel isn’t just on the outside of the roll. Instead caramel is slathered on the dough before it’s rolled up, so the rich stickiness is throughout the roll. Nuts and cinnamon are tucked between sheets of tender dough, then we add more nuts and caramel to the outside of the rolls, enrobing them with sweet gooey goodness.

The dough we use for these rolls is something special. Both Harper and I have been working for months to get a sweet roll to turn out this yummy. We have altered mozzarella dough in every way imaginable, and we finally have a winning recipe!

This dough is not only easy to make, it also rolls out well and shapes well. When baked, it rises a bit and the end result turns out tasty and tender. If you’ve never worked with mozzarella dough before, there are a few tricks for success. My favorite trick is to use part-skim grated mozzarella cheese. This cheese has a higher protein content and adds to the stretchiness of this dough. Also, be sure to work with the dough quickly as it is easiest to manipulate when it is warm. It is easiest to work quickly if you have your parchment and rolling pin prepared ahead of time.

Our Ultimate Low-Carb Caramel Pecan Sticky Buns are at their best when eaten still warm from the oven. If you have leftovers, store in an airtight container in the refrigerator. Reheat before serving.

Ultimate Low-Carb Caramel Pecan Sticky Buns

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Spray a 9" X 9" pan with coconut oil or grease with butter. Have a rolling pin and two sheets of parchment about 18" long within reach.

For the caramel

  1. In a 2 quart sauce-pan, add Vitafiber syrup, stevia/erythritol blend, blackstrap molasses and water. Heat over medium heat stirring constantly until sweetener is dissolved. Stop stirring and swirl pan intermittently. After mixture reaches a boil, boil for 3-4 minutes longer or until mixture becomes slightly darker golden brown. Do not burn.

  2. Turn heat to low and vigorously whisk in the butter. Be careful as mixture will bubble up.

  3. Once butter is combined, slowly add the cream while whisking. Turn heat to medium low and bring mixture back to a boil.

  4. Boil mixture, stirring constantly for about 2 to 3 minutes more. Remove from heat. Add vanilla extract and salt. Set aside.

For the filling

  1. Place 1 cup pecans (reserving 1/2 cup for later), 2 teaspoons stevia/erythritol blend, and cinnamon in a food processor. Pulse a few times until the nuts are chopped and ingredients are combined.

For the dough

  1. Prepare a double boiler. A medium saucepan with a medium bowl that will sit on top works fine for this purpose. Add about 2 inches of water to the saucepan or lower part of the double boiler. Place over high heat and bring to a simmer uncovered. Once simmering, reduce heat to low.

  2. Meanwhile in the top-part of the double boiler (with it not over the water) combine the almond flour, stevia/erythritol sweetener, xanthan gum, and baking powder using a whisk.

  3. Stir in the egg and vanilla extract. The mixture will be very thick.

  4. Stir in the mozzarella cheese and place over the pot of simmering water. Be sure to protect your hands from the steam escaping to pot. I use a silicone mitten for this purpose.

  5. Stir the mixture constantly while the cheese melts and combines with the flour. It will begin to look like bread dough.

  6. When the cheese has melted completely, transfer the dough to a prepared piece of parchment. Knead the dough a few times to completely combine the flour mixture and the cheese. Pat dough into a rectangular shape and cover with the second piece of parchment. Roll out dough into about a 12" X 15" rectangle. Remove top parchment.

To assemble

  1. Pour 1/2 cup of the caramel into the bottom of the 9" X 9" pan. Sprinkle with the reserved 1/2 cup of pecans.

  2. Pour the remaining caramel onto the rolled out dough and spread using a spatula or butter knife leaving the outside 1/2 inch edge uncovered.

  3. Sprinkle the pecan, stevia/erythritol blend and cinnamon mixture evenly over the spread caramel.

  4. Starting at the long side, roll the dough into a log shape. Press the outside long edge to seal.

  5. Using a serrated knife, gently cut the log crosswise into 9 pieces. Arrange the rolls in three rows of 3 rolls on top of the caramel and nuts in the prepared pan. Try to space them equally.

  6. Bake for 25-30 minutes or until the top is golden brown.

  7. Allow to cool for 5 minutes, then cover the pan with a large plate and flip, so the rolls come out onto the plate with the caramel and nuts that were in the bottom of the pan on the top of the rolls. Serve warm.

*You may substitute stevia/erythritol blend for this ingredient, but the caramel may become more granular when the buns cool.

    Are you finding the “super fine” almond flour in the grocery stores or just online? If I am using an almond flour that is finer than almond meal but not “super fine” would it work in your recipes without ruining the end product?

      Jo Anne, Thanks for checking out our site! I find there is a lot of difference in the grind of almond flours. For this recipe, look for one that has a powdery consistency. I love the one I have the link to and that is the one I use in my own kitchen about 95% of the time. Trader Joes has a blanched almond flour that has an extra fine grind that would work well for this recipe. There are others, but I don’t have any on hand right now, so I can’t check to see what the grind is like. If the almond flour you have is powdery, it should work fine.

      I would not try to freeze the dough and then defrost to use. I have not tried freezing these sticky buns either before of after cooking. My concern would be that the caramel might separate.

    How does this dough compare in texture with the regular fathead dough? I notice the cream cheese is missing. I made cinnamon rolls with the regular fathead dough recipe but added a tsp of baking powder. Is the texture stiffer without the cream cheese?

      I think it may be lighter than fathead dough. The Xanthan gum and the baking powder allow the dough to puff up a bit when it bakes. I really like the texture of the finished sticky buns.

      This is one of those recipes I could have everyone taste. They really do taste like the real thing. I’m planning to make them Christmas morning and looking forward to every bite! When you add the frosting is up to you. If you add frosting when they are super hot, the frosting melt just melt in a gooey mess. If you let them cool until they are just warm, the frosting will probably melt a bit, but in an appetizing, melty goodness sort of way. If you wait until they are completely cool, the frosting won’t melt at all. It just depends on what you’re going for.

      I have not used coconut flour for this recipe. Coconut flour acts very differently than almond flour does, so it may not work without making other changes in the recipe.

      I never do fathead in a double boiler, only melted the cheese in the microwave. This dough was perfection, and so easy to work with! I used ChocZero caramel syrup probably not the same, but close enough, and a little brown sugar Swerve, I didn’t have any molasses, mixed with allulose, my new sweetener of choice. With that said, these were perfection, – so much lighter, to me, than making icing or glaze! I can’t wait to try more of your recipes! Good job!

      I think half and half will work okay. I haven’t tried it, but I know that some recipes for caramel use half and half instead of cream.
